We love avocados in our house, and you’ll always find one, or two, or three in our refrigerator. When we aren’t making our homemade guacamole, you can find us using avocados in a lot of different meals. Have you ever tried using avocado paste instead of peanut butter? It tastes so much better in my opinion and not just because I’m allergic to peanuts. For those with peanut allergy like me, you may want to give it a try and let me know if you like it. I grew up in the Caribbean where we actually had an avocado tree in our backyard, so it was literally a pick and eat kind of fruit for me, just like mangoes. Today I want to share with you a delicious Tuna Avocado Salad that will knock your socks off. Forget about just regular tuna salad, add a bit of avocado, and you’ve got an instant hit. Before I share my recipe with you though I do want to share a bit of the health benefits of avocados.
Did you know that avocados contain nearly 20 vitamin and minerals that you need? Also eating just 1/2 of an avocado provides about 20% of the folate that you need for your body. An adequate amount of folate in your diet has been shown to reduce cancer, so I like to call avocados the cancer-fighting foods. Avocados are also high in fiber and have been known to prevent constipation. Eating foods like avocados have been shown to decrease heart disease and diabetes in individuals. There are quite a lot more benefits to eating avocados and but the best of all is that it just tastes good. So without further ado let us get into our Tuna Avocado Salad recipe.
Here is what you’ll need:
Ingredients:
1 2.6 oz tuna pouch, any brand
4-5 cherry or grape tomatoes, cut into quarters
1 medium size avocado, diced
1 C. of fresh baby spinach salt & pepper to taste
Directions:
1. Quarter the cherry/grape tomatoes and dice up the avocado.
2. Carefully combine the tuna, avocado, tomatoes, and salt and pepper, mixing well.
3. Equally, divide the 1 cup of baby spinach leaves onto a small plate and then split the tuna avocado salad between the two plates.
4. Serve immediately.
*Makes 2 servings.
