I remember watching the original animated version of Disney’s The Jungle Book when I was a young child, and even as an adult with my own kids. We would sit around and sing along with Baloo as he sang “The Bare Necessities” to Mowgli. They had a very special relationship, as Baloo tried teaching Mowgli that living in the jungle was the best thing ever. When I heard that Disney was recreating The Jungle Book, but a live version, I was very excited and like most people can’t wait to see it on opening day Arpil 15th. Today, in celebration of Disney’s The Jungle Book, I had a friend create some very delicious Jungle Book Cupcakes for me, to share with you. She did an exceptional job and if you’re planning on having a Jungle Book themed party, these would be a hit!
Here is what you’ll need:
The Jungle Book Cupcakes
Ingredients
Cupcakes
3 tbsp canola oil
1 stick unsalted butter room temp.
1/2 cup dark chocolate chips
1 cup granulated sugar
2 large eggs room temp
1 tsp vanilla
1 cup all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/2 cup unsweetened cocoa powder
1/2 tsp salt
1/2 cup sour cream
1/2 cup hot coffee
Toasted coconut
1 70z package sweetened flaked coconut
2 tbsp. of butter
Frosting
2 cup powder sugar
1 cup unsalted sweet cream butter softened- room temp
1/4 cup cocoa powder
3-4 tbsp heavy whipping cream
Directions
Cupcakes
Preheat the oven to 325 degrees
Line a 12-cup cupcake tin with cupcake liners
Melt the oil, butter, and chocolate in a microwave, for 45 seconds remove and stir place it back in the microwave again for 30 seconds stir again – set to the side.
In a bowl add the flour, baking soda, baking powder, cocoa, and salt– stir together until combined.
Using a another bowl a large one this time, whisk together the eggs, sugar, sour cream, and vanilla use an electric mixer beat on medium until smooth.
Add the chocolate mix to the egg mix and whisk until smooth.
Now add half of the flour mix and mix well to combine.
Continue to add the rest of the flour and mix to combine.
Add your coffee/water and lightly fold in.
Fill your cupcake liners 3/4 of the way full/
Bake for 18 minutes
Cool completely before frosting
Toasted Coconut
In a saute pan add butter and coconut on medium heat.
Continue to stir the coconut until a light golden brown.
Do not walk away so that it does not burn.
Let cool- set to the side
Frosting
Combine all ingredients into a mixer and cream until smooth.
Pipe onto cupcakes and top with coconut and chocolate drizzle.
Eat and enjoy!
