I hope everyone had an amazing Thanksgiving. I have to say that this Thanksgiving was one of the best that I’ve celebrated since I’ve started celebrating with my family. Now that my kids are older they can all help out in the kitchen, thus allowing me to relax for a change, without me standing in-front of a stove and oven for many hours. Everyone had their own little dish that they had to make, and even Madison helped out, while I maintained that I was going to be in charge of all the meats. Everyone sat around the dinner table and said what they were all be thankful for this year, however, what we didn’t realize was how much food we actually prepared, and how much was going to be leftover. Now that Thanksgiving is over, there is so much leftovers in the refrigerator, and if your kids are like mine, and leftovers is not a thing that they like eating, then you’re going to be wondering what to do with it all. How about turning it into a Thanksgiving Leftovers Casserole? Instead of throwing it all away, make a brand new dish that the entire family will enjoy.
Here’s what you’ll need:
Thanksgiving Leftovers Casserole (serves 4-6)
Casserole Ingredients:
2 cups cooked turkey, cut into chunks
3-4 cups prepared stuffing, crumbled
1-1/2 cups gravy
3-4 cups mashed potatoes
Casserole Directions:
Preheat oven to 350.
In a square baking dish, layer the following items, turkey, stuffing, gravy and potatoes. It helps if you use small spoonfuls of potatoes and flatten them on the top of the dish. Or, you can grab a handful, and “patty” the potatoes between the palms of your fingers and place the patties onto the top of the dish.
Heat for 20-25 minutes just until potatoes begin to brown and dish is heated through.
Gravy Ingredients:
1/4 cup butter
1/3 cup flour
1 cup broth
salt and pepper
Gravy Directions:
Over medium heat, add butter and flour in a saucepan. Stir with a whisk until butter is melted and combined with the flour (it will almost be a brown color). Slowly stir in broth and whisk until thick and bubbles just start to form. Remove from heat and season with salt and pepper.
Serve and enjoy!
