Marielle and I have been friends for quite a few years, and you can find us messaging each other through the late hours of the night, and sometimes the wee hours of the morning. Even though we haven’t formally met in person, there are plans to change that some time this summer. However, without further ado, here’s Marielle.
Mangoes are my guilty pleasure. I could eat them all day long. Only issue? I live in Canada and mangoes are usually only available during the warmer seasons. If you are lucky though, you can find juicy and sweet mangoes in early spring. Today I want to share my healthy version of mango sorbet. The recipe is super easy to make and doesn’t require a lot of steps.
Sorbet is such a simple treat to make. During the summer, it makes for a refreshing alternative to ice cream. It’s also much healthier than ice cream so you can indulge a little. There are so many flavors of sorbet but I really love the taste of mango, coconut, and hint of lime.
Mango Sorbet
Ingredients
2-3 Cups of cut fresh or frozen mangoes (save a few pieces to garnish)
1 Tablespoon of honey
1 Can of coconut milk
1 Teaspoon of lime zest
3-4 Slice of lime for garnishing (optional)
Steps
In a blender, add your mango, honey, coconut milk and lime zest. Blend everything until smooth.
Pour your mango mixture into a freezer safe container. Add fresh or frozen mangoes on top of your sorbet along with a few lime slices.
Freeze for an hour before serving.
If you use frozen mangoes, you can freeze for under 30 minutes or even eat right away.
Serve your mango with fresh mango pieces and more lime. The taste is out of this world. It’s so refreshing and tropical.
