Whether it’s a cool fall day or feeling a bit under the weather that calls for a bowl of homemade chicken noodle soup, if you’re gluten free this becomes a challenge. This Quinoa Chicken Soup is so good you won’t be missing the noodles at all. Quinoa is naturally gluten free and has an amazing flavor.
Here is what you’ll need:
Ingredients:
• 3 cups dry quinoa
• 3 cups water (for cooking the quinoa)
• 4 cups chicken broth
• 2 cups vegetable broth
• 1 1⁄2 lbs chicken breast
• 2 -3 stalks celery
• 2 carrots
• 1⁄2 large onion
• 2 tbsp butter
• salt, pepper, and garlic salt to taste
Instructions:
Combine water and quinoa in large pot and bring to rolling boil over high heat. Cover, reduce heat, and simmer for 15-20 minutes or until quinoa is tender. You will start to see white strands form on the outside of the individual grains when the quinoa is done. Remove from heat and set aside.
While quinoa is cooking, season and bake chicken breast in 350 degree oven for 20 minutes on each side. Remove chicken from oven and cut into bite size pieces.
Cut the celery, onion, and carrots into thin slices and sauté in butter over medium heat.
Combine chicken, sautéd vegetables, and broth in large stock pot and cook until heated through.
Once the stock is fully heated, add the cooked quinoa.
When the quinoa has reached the temperature of the soup, it is ready to serve!
Quinoa is a great option even if you are not gluten free. It has a great texture and offers an almost nutty flavor to your recipe. It’s a great healthy alternative to rice or noodles in so many recipes!
