It’s Sunday and today I want to share something that will help you make a good breakfast even better. It seems like pumpkin spice everything is in season right now, and these pumpkin spice pancake balls are a great addition to the list! They would make a perfect breakfast for any fall morning or a special addition to Thanksgiving Day breakfast or brunch. Not only do they have the pumpkin spice flavor, they are filled with sweet pumpkin spice chocolate like candy!
Here is what you’ll need:
Ingredients:
1 cup all purpose Flour
2 tsp Sugar
½ tsp Baking Soda
1 tsp cinnamon
¼ tsp nutmeg
1 tsp Salt
2 Eggs
1 cup Milk
2 tbsp Butter
1 tsp Watkins Pumpkin Pie Extract
¼ Cup Pumpkin Spice Candy Melts

Instructions:
Preheat oven to 350 degrees.
Grease each mold of the donut hole pan with shortening or baking spray.
Combine flour, sugar, salt and baking powder in bowl.
Separate eggs and whisk together egg yolks, butter, milk, and pumpkin pie extract in small bowl.
Pour wet ingredients into the dry ingredients and mix until just combined.
Whip egg whites in separate bowl until stiff peaks form.
Fold egg whites into batter until mixture is just combined.
Chop candy melt into small pieces, then fill each mold with batter and press roughly 1/4 teaspoon of chopped candy melt into each until covered in batter.
Bake for 8-10 minutes or until a toothpick inserted into the center comes out clean.
Remove from oven and sprinkle with cinnamon sugar or drizzle with syrup.
