Breakfast is the most important meal of the day, but that doesn’t mean that breakfast has to be boring. Occasionally on the weekend we love to make things interesting and mix it up. This past weekend we decided to make breakfast pizzas. Who says that you can’t eat pizza for breakfast? We love ordering it and according to my son Kyle, it tastes so much better in the morning at breakfast time. You still get a serving of eggs and bacon for those who love bacon, but we included a veggie for you too. Let the kids put the toppings on, and let them have fun on the weekends with our delicious breakfast pizzas.
Breakfast Pizzas
Ingredients
1 8″ ciabatta loaf
6 large eggs
2 tablespoons half and half
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup sharp white cheddar cheese, shredded
4 strips bacon, cooked & crumbled
1 large tomato, sliced into 6 thin rounds
2 chives, chopped
Instructions
Preheat your oven to broil.
Slice the bread in half horizontally, brush it with a little bit of olive oil or butter and place it under the broiler for 60 – 90 seconds or until lightly browned.
Remove the bread from the oven and set aside. Turn the heat down to 450.
Add the eggs, half and half, salt and pepper to a bowl and whisk until thoroughly combined.
Spray a non-stick pan with a little non-stick cooking spray and add the eggs.
Cook over medium heat until the eggs are about 90% done.
Add 1/4 cup of the cheese, half the bacon, half of the chives, stir to combine and remove from the heat.
Line a baking sheet with Parchment paper and build the pizzas on top of it.
First lay three slices of tomato on each piece of bread.
Next sprinkle 1/4 cheese over the tomatoes.
Add the eggs next. The easiest way to do this is spoon them down the middle and then gently flatten them out.
Top the eggs with the remaining bacon and cheese.
Bake for 5-7 minutes or until the cheese is thoroughly melted.
Serve with additional green onions sprinkled on top, if desired.
