This year I decided that I was going to resume my Keto diet. Many may not realize this, but I’m considerably overweight. Due to my height of 5′ 10″, it’s not apparent by merely looking at me, but it’s been a goal of mine to lose as much of the weight that I can.

Chunky Avocado Tuna Salad

INGREDIENTS
1 Package StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna in Extra Virgin Olive Oil
1 Package StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna with Sun-dried Tomato in Extra Virgin Olive Oil
1 Ripe Avocado Chopped
½ English Cucumbers Chopped
¼ Cup Red Onions Chopped
2 Boiled Eggs Chopped
1 Tbsp Relish
1 Tbsp Lemon Juice
½ Tsp Curry Powder
½ Tsp Pink Himalayan Salt
Dash of Pepper
DIRECTIONS
Chop your avocado, cucumbers, red onion, and eggs.
Make sure that your avocado is ripe and soft so that you can combine it easily since it will be taking the place of mayo. For those who still want to add mayo, use just a dollop if your avocado isn’t as ripe as you’d like it to be.
Since there is no can for you to drain, simply open your StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna in Extra Virgin Olive Oil and StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna with Sun-dried Tomato in Extra Virgin Olive Oil and combine together in a bowl with all your other ingredients, including the ones you just chopped.
Serve on a lettuce wrap.
