I can’t believe that I didn’t do this before. Every year I would spend hundreds, maybe thousands of dollars, visiting two of my favorite burrito restaurants just to order a burrito bowl. However, when Old El Paso introduced their own cheeses, I thought, hey, why don’t I do a cheesy burrito bowl? After all, now that COVID-19 had put a pause on going out for food, it’s time to become ingenious and make my own.
I bet you didn’t know that Old El Paso has launched a new cheese line. Their portfolio no longer only consists of taco shells, dinner kits, and sauces. They currently have six shredded cheese varieties including, Mexican 4-Cheese, Monterrey Jack, Quesadilla, 3-Pepper Blend, Mexican Taco Blend, and Finely Shredded Cheddar and they’re all perfect for any cheese dish you can whip up, including quesadillas and tacos!
Now the reason I chose to recreate a burrito bowl is that they can be customized your way and might be healthier too as you know exactly what you’re putting in them. If you don’t want rice, don’t add it, don’t like meat, don’t add it, want a lot of cheese, go for it! With fresh veggies and about 10 mins of prep time, you’re going to love it!
As mentioned, this is customizable, and you can add your favorite proteins, beef, chicken, lamb, whatever you desire. Or, you can go the vegetarian route and omit the meat completely. However, if you’re on a low carb diet, skip the rice entirely and opt for cauliflower. I did two versions of this, one with meat and one without, and they were both delicious!
Burrito bowls are a great way to get rid of your leftovers, just in case you don’t know what to do with that extra rice, salad and meat you have sitting in your refrigerator. Instead of turning your leftover rotisserie chicken into a chicken salad, why not a burrito bowl?
Easy Cheesy Burrito Bowl
Serving Size 2
INGREDIENTS:
1 cup pico de gallo (check out our homemade pico de gallo recipe)
1 cup chopped lettuce
1 cup baby spinach
1 can whole kernel corn, drained
1 avocado, halved, seeded, peeled and sliced
1 cup shredded chicken or beef strips
2 cups Old El Paso Shredded Cheese (your favorite)
Sour cream
Old El Paso Taco Sauce (optional, but makes it better)
Wide bowl
(Most of these items you may already have in your pantry or refrigerator, so no need to rush outside to grab them, or simply improvise.)
ASSEMBLY
To assemble, grab your bowl and divide your ingredients in half as this makes 2 servings.
If you’re using ground beef, brown your beef in a large skillet and be sure to drain the oil.
Wash and prep your veggies, peel and slice your avocados, chop your lettuce, etc.
Place the ingredients in your bowl, any way you’d like and top with sour cream, and don’t forget your shredded cheese.
For an added kick, add some Old El Paso Taco Sauce.
